I might be horribly wrong, but here's my 2 cents:

What she did was defeating you on your own ground, lad. She saw that all you said is some sort of defence system you develloped to protect your vulnerable self. By agreeing with you, she made it so that you don't have any reason to turn her down. She put herself out there, and she's interested. Now be a brave boy and try to make it work! Invite her to something!
Also, cooking works wonders!

Last but not least, let it be noted that I'm not always a sarcastic haughty arse! I genuinly try to help here!

There's no elitism involved whatsoever, it's just a hint to make it easier for you, Boris. There's just so much material about the subjects you proposed, that you'll struggle to find the right works. Pick a small subject, get some articles about it and you're there.
A medieval city revolt is just a suggestion, Belgium has nothing to do with it. I just gave you a particular one you could look up on wikipedia to get an idea (because, of course, the larger netherlands is the part I know most of).
