What would happen if everyone started using electric cars and had wind energy and no dependent on oil anymore?......
we'd still want plastics

Well if we used all metal production, and all silicon production, of the whole world, in 20 years the United States can finally be 100% solar and wind powered
Wind is impractical. It takes tons of land and maintenance. Batteries take a while to charge, and people want energy now. Who wants to wait 6 hours at the gas station every time their car runs out of juice?
Ethanol is the future.
Ethanol uses huge amounts of farmland, which has driven food prices up dramatically. In addition, it's empirically created monocropping and water pollution through the needs for expanded industrial agriculture, both creating huge environmental consequences.
Biogas is the future.

Bio gas has proven to be a massive water devourer, so much that it would require all Fresh water in the United States to fuel 1/3 the vehicles.
Nuclear power with carbon nanotubes storing the power is clearly the way to go.

Carbon nanotubes with an exposive filler can provide energy on demand, tremendous amounts if needed, carries more energy than anything else per pound and nuclear reactors can power the production of these tubes.
You would buy a solid tube or such which will power you for 400 miles or so.
Carbon nanotubes increase human development of nanotechnology. In order to mass-produce said technology, self-replicating nanotechnology will inevitably have to be made. Congratulations, Flint, your energy source created gray goo, and consumed the planet.

There are 3 manufactorers of double tubed carbon nanotubes in progress of construction. Carbon nanotubes are remarkably easy to make, quality control is the only real issue.
You burn, in a non oxygen environment fiberglass. Voila.
Their figures say they have resolved quality control.
Of course since the Stealth Fighter is made of the stuff, some US company *cough*Raytheon*cough* has been making the stuff since the late 70's. The Aurora is made of the stuff to.
The future is coming, but the US may not lead the way due to our socialization

Isn't there some crazy hippie scientists in Nevada that've figured out how to use sunlight to split air into the building blocks for gas, then a machine that puts the blocks together correctly? Know it's early days for it yet but seems a viable alternative to me.

There is a bacteria they developed that can take sunlight and turn it into oil I think or some other kind of energy.

Hydro-geothermal. There are enough "hot rocks" to power Australia for about 7500 years at current consumption of electricity. With that being the case we can remove some of our dependance on oil.
On the original post, we use oil in cosmetics aswell, not just our cars! 
The oil reserves would eventually build up again...
What do you think your Xbox live machine and your CD cases are made of? Plastic? Petroleum byproduct? Those wheels on your honda civic and Toyata 4wheelers are made of rubber right? Allthough still a quite new concept, only 3 companies that is experimenting with it / research into it
Wavestar is 1 of the companies doing something in the field, cant remember the names of the 2 other companies.
Oceanlinx have already set up a wave energy converter in Australia, pumping juice into the powergrid. \o/
