its more like paper, FWOOMT its burnt, that's why you can cook patties with a half inch of glowing charcoal

to get hamburger "medium rare" means you just don't cook any part of it with enough heat.

the red robin by me has excellent service and will cook your burger medium rare... i can't stand beef above cooked above medium and prefer medium rare.  the burgers are better then the average corporate restaurant burger, but there are plenty of places by me with far superior burgers, the bar with my favorite burger only charges $3.50 with a 7oz patty and if i'm really hungry i'll add a 2nd patty for $2 more and i have yet to find a place that has comparably flavorful burgers to it and i am actively looking....

Chris, there are plenty of places that have no problem cooking a burger to medium rare.  i don't understand how people can stand eating well done beef, it has so little flavor and is dry as hell... i can't stand fast food beef either...
