It turns out that I have a pathological inability to make important decisions. I've got a new job lined up to start in October with a pretty nice pay rise, but I'm going for an interview tomorrow for a different job anyway.
The job I already have lined up is a

Stick with current job. If you think you could live on 200 per month, try to build up a savings.
When you've got a significant enough savings, you could switch to another job similar to what you're currently considering, yet you won't have to worry about the pay loss.
The other detail is that the low paid job isn't an opportunity that happens very often but if I turn down the first job my reputation will be muck with a prestigious employer in that field so might find it hard to get that job again in the future.
I don't think the decision can be deferred that easily.
Send me all your money and kill yourself. You have nothing to live for anyway.
j/k. I think you should stick with your current job. It's solid income and you know you can do it just fine. New stress levels/hours/coworkers may make the new one unbearable making it a very bad place to put yourself.
Another detail is that my current job isn't an option because I am on a fixed term contract which runs out in September, so I have to take a new job whichever it is.
So take the first. Seems like a much better choice for you in the long run. It's best to approach these things logically without allowing your feelings to influence your decision.

i think most likely eventually you will get used to either job and find it boring. But then again, with either job you're probably going to advance and get paid more. And finally, assuming you aren't currently married; what if you get married and have children? will you be able to support your family with the 2nd job?

If this is the case, why did you ask the question in the first place? Is the choice now keep both jobs vs. quit one, or are you telling us that there's only one option, and you're just wasting our time?

he has current job, he has another job lined up for when he has to leave his current job, and he has a third job that he's kinda interested in and has an interview for.... so he's asking which of the two jobs to pick.

does the more exciting job have the opportunity for advancement? taking a job that pays more now might not be the better decision a while from now if there is nowhere to go.
The boring job has a defined career ladder to progress up,
The exciting job is actually a PhD studentship so who knows where that might lead to? Probably becoming far too specialised in a niche area that nobody really cares about?

take the damn boring job. do what wc, and use the money from the boring job to make life interesting. save up some, and if you don't like it after a while start looking for something more interesting to do.
you're not giving a lot of information to go on though, what sort of job would it be?
I went the phd route (which to be honest is actually well paid in my country and university) and haven't ever regretted it, because even the hard parts were fulfilling and fun to put it all mushy. Not to mention the return on investment of a phd is pretty big. I also appreciated the opportunity that I was given, phd's are the highest academic degree and not many people have them and you get to do something useful for society by writing them.
given the content of your dilemma I take it you're pretty young (23-25ish?) so you probably don't have a lot of life's obligations like paying off loans, filling up truck sized cars or paying for the kids so a pay cut of 200 pounds shouldn't be that big a deal unless you're already earning a pittance right now.
I thought I had this clear that I was going to take the cushy but boring job, but I found out today I've been offered the PhD studentship. Now what do I do? AAAAAAAAAAAAAAAAAARGH

The way I see it, the highest paying job is best. If it's boring, then deal with it. Of course, I would not blame you if it were a risk to your life and/or very painful to endure, but that is not the case. The end-goal of working should not be to pay your bills and many conveniences, but to pay your bills while you purchase appreciating assets that allow you to quit work and live for yourself.
Second, you already admitted that taking the low paying job, while potentially rewarding, could be a liability to your career. My view is that you should build a resume that is as valuable as possible. I say that it is too risky and not worth the return.
