Ruth's Pasta Salad
Ingredients:
1 lb. package fusilli or corkscrew pasta
1 large slice fully cooked ham
3/4 c. sour cream
1/4 c. mayonnaise
1 salad package arugula
1 large tomato
1 yellow crookneck squash
1 green bell pepper
1 red bell pepper
1 red onion
1 8 oz. pkg. goat or blue cheese, crumbled
1 cucumber
1 Tblsp. crushed red pepper flakes
1 1/2 tsp. fresh basil (or 1/2 tsp. dried)
1 1/2 tsp. fresh thyme (or 1/2 tsp. dried)
2 tsps. fresh sage (or 1 tsp. dried)
Cook pasta according to package directions. Once pasta is cooked, drain it and rinse it in cool running water. Immediately add the sour cream and mayonnaise, mixing well so that the pasta does not stick to itself.
Then chop or dice the vegetables and ham and add them to the mixing bowl. Mince the herbs and add them to the bowl.
Place in the refrigerator to chill for at least two hours before serving, but overnight will blend the flavors even better.
